Florally fruity with a jammy sour-sweetness, these dried apricots are an excellent substitute for the fresh fruit when out of season. While they pair beautifully with dairy ingredients which bring out their vanilla notes and contrast their gently acid tang, they are a classic combination with lamb in tagine.
