Available all year round, our red cabbage is distinguished by its violet-burgundy colour and like green cabbage it is rounded and wrapped in tightly wound waxy leaves. Eat raw, ferment, pickle or braise, it has a mild and sweet flavour whist raw and a more assertive peppery flavour and crunchy texture when cooked.
