Tiny jagged-edged leaves with a fresh green colour, lemon balm has a bold citrus flavour with mint undertones and is sometimes described as a (hopefully welcome!) ‘shock to the mouth’. Its lemony tang works well with fish, poultry and vegetable dishes as well as adding a delicious zing to mixology. Picked when young to deliver ultimate tenderness and flavour, these little leaves make a beautiful garnish.
