Use this versatile, vegetarian gelling agent in place of gelatine. Soluble in boiling water, this is the strongest natural gelling agent currently available. It can be melted and reset, gels at temperatures from 35-45? and melts at temperatures from 85-95?. Ideal for binding terrines and making warm or cold jellies. Agar Agar will hold at room temperature and when added to water based icings, the need for refrigeration can be completely avoided.
