A long-grained, high-starch rice from the Pavia, Novara and Vercelli provinces of Northern Italy. Unlike its counterpart Aborio, Carnaroli rice has a firmer texture which guarantees a creamy risotto with an Al Dente bite. Use as the base for risottos and arancini.
