Salsify’s population is deservedly gaining momentum. Its humble stick-like appearance hides a delicately flavoured smooth textured interior. Part of the dandelion family, salsify can be boiled, mashed or added to stews and soups as with most other root vegetables. Some people liken the flavour to oysters, others to artichoke. Once exposed to air, their rich white flesh can brown quickly, so have some lemon infused water to hand as you peel.
