A traditionally smoked sausage from the mountains of France. Produced using pork from the Franche-Comté region, the sausages are smoked for at least 48 hours with sawdust from local conifer and juniper trees to give them their characteristic woody flavour. Add diced to casseroles to imbue their smoky flavour or cook whole for a heart-warming dish.
