This full-bodied cheese is made by Jeff Reade at Sgriob-ruadh Farm on the Isle of Mull off the west coast of Scotland. Isle of Mull cheese uses unpasteurized milk from Friesian, Ayrshire, Jersey and Brown Swiss cows. The cheese is clothbound and matured for 12-14 months to create a savoury flavour and firm texture.
