Comté is an ivory coloured, nutty cheese made from unpasteurised cow's milk and brandishing a golden brown rind. Similar to a distinct Gruyère, with a hint of caramel sweetness, Comté pairs beautifully with dry, white wine or minerally chardonnays, also with pinot noir and Champagne.
