A little larger and with a more bulbous shape than spring onions, grelots have a mild sweet taste. Delicious both raw and cooked, slice thinly to sprinkle over salads, pickle in a light balsamic or confit in oil. They cook to a luscious caramel in a tray of roast vegetables or a silky softness in a classic barigoule.
