Also known as Romaine lettuce, these tall heads of sturdy green leaves are crunchy and sharp in flavour with a faintly nutty finish. Traditionally used in Caesar salads, this is a wonderful addition to mixed leaves, grilled and dressed with a drizzle of vinaigrette, or sautéed for a delicious accompaniment to spring chicken and new potatoes.
