An ash coated log with a grey black rind bark like geotrichum and natural mould rind. The rind can also have some natural green and blue moulds. This cheese should have a smooth interior with no holes, mechanical or gas. As the cheese ripens there should be an amount of surface ripening. If the cheese is left unwrapped it should slowly dry and the centre should become firmer and smoother.
